BEAN SOUP WITH RIND
PORTIONS: dose for 4 people
300 g. dried beans from San Anter 'di Casalbuono
200 g. of pork rind
2 cloves of garlic
2 tablespoons of extra virgin olive oil
1 tablespoon of pepper powder
Cook the San Anter 'beans from Casalbuono together with the pork rind, cut into small pieces;
Once cooked, season with the pepper powder to remove it in the oil,
add the salt and pour the beans seasoned in a bowl, or in individual dishes, on freselle or stale bread.
"This bean soup can also be prepared with fatty sausage (nnoglia) or boiled pork legs"
